I have made a few things today. Preparation for the first recipe was completed yesterday. This was for my Fruit Cake.

So yesterday i have placed the bag of dried fruit in a large container and then topped it off with 1 litre of iced coffee. This i have left overnight in the fridge.

This morning i have greased 4 loaf tins and then brought out the fuit and milk mixture. To this i have added 4 cups of self raising flour and mixed until combined.

I have then poured the cake mixture into the prepared loaf tins and placed these into the oven for 1 hour and 15 minutes.

I have allowed these to cool in the pans for 10 minutes and then turned them onto a wire rack to completely cool before wrapping these with plastic wrap.

Next i have made pasties.

Using a chinese parsnip, 1 potato, 1 large sweet potato, 1 carrot, 1 sweude and 1 turnip finely diced. 300g beef mince and curry powder.

I have cut out circles in the puff pastry sheets, i have topped each circle with a large spoonful of vegetable mixture and then folded the pastry over and sealed these with a fork.

I have made 52 pasties.

I have then placed these pasties on a greased tray and baked these for approx 10-15 minutes at 180c. You want to make sure that the pastry is puffed and golden.

Lastly, a new recipe i was given to try was Peppermint Slice.

So combining the block of peppermint flavoured chocolate, i used Cadbury, and the butter in a heat proof jug, i have melted this in the microwave for about 30 seconds, i have then added to the jug the tin of condensed milk and the biscuit crumbs and mixed to combine.

I have then poured this into my slice pan that was topped with “Go-Between” and then sprinkled coconut over top and placed into the fridge to set.
