It has been awhile. Been a little busy to update you all on my cooking adventures. So here goes.

For a going away for a girl at work i have made Double Chocolate Cupcakes with Peanut Butter Frosting.

To make these i have combined all ingredients per the receipe.

Once completely cool i have frosted the cupcakes and the placed in the fridge for the night.

I have sprinkled crushed chocolate over the cupcakes.

For dinner on Sunday night after my own Tupperware Party i have cooked up Slow Roasted Lamb with Flatbread and Mayo.

For the Lamb. I have used leg of lamb and rubbed in the cumin, salt and oil. I have then placed this in the bed of my Tupperware Ultra Pro and cooked this in the oven for about 2 2/1 hours.

Next i have made the flatbreads. To do these i have combined the flour with a tub of feta, dill and yoghurt dip. I have kneaded the dough and then separated into 18 balls.

I have then rolled each of these out and then added to a hot pan. Once the bread in the pan has started to bubble/ breathe i have then flipped and allowed to cook for the same amount of time.

Next i have made the mayo. I have combined the mustard, egg, olive oil and lemon juice in the blender and blended until combined.

I have then pulled the meat from the bone of the lamb. Served with shaved cucumber and corriander.

During the Tupperware Party i have made 13 minute Chocolate Cake in the MicroSteamer.

Combining the flour, sugar, butter, cocoa, vanilla and eggs together in the extra chef until all mixed together. I have then spooned the batter into the muffin form and then steamed these for 13 minutes in the MicroSteamer.

I have let rest for a few minutes and then enjoyed.

The only thing i have not done was make the frosting for these.

For a quick weeknight dinner i have made Apple Pork with Bacon and Peas.

So for this recipe i have used Pork Loin Steaks, apple sauce and soy sauce.

I have then added to the pan onion, garlic and bacon. Once onion softened and the bacon was cooked i have added 1/2 cup cooked brown rice.

I have returned pork and reserved marinade to pan reduced heat to medium-low and simmered minutes adding snow peas in the last 5 minutes of cooking.

Another dinner, Beef Stroganoff.

Combining diced beef, mushrooms, tomato paste, paprika, onion, beef stock and olive oil in the bowl of a slow cooker.

I have cooked this on auto for 5-6 hours.

I have put rice on in a rice cooker and whilst that was cooking i have added a tub of sour cream to the stroganoff.

Once rice is cooked i have served whilst still hot.

A dinner with a difference, Bolognaise Pie.

I have lined large pasta tubes into a springform pan.

I have then made a bolognaise sauce and poured this over top of the tubes. It is a little fiddley as you do need to poke the sauce down into the holes of the pasta.

I have then sprinkled cheese over top and cooked for about 40 minutes in a moderate oven.

Once cooked i have cut like a pie and served.

Finally, we are up to today. Orange Cake with Cream Cheese Frosting.

I have grated the zest of an orange into a bowl. I have then added 120ml orange juice, butter, eggs, flour and sugar.

Combined these until smooth all ingredients have been mixed together.

I have then spooned batter into 2 loaf tins and cooked for 40 minutes. I have then allowed to cool completely before frosting.

For the frosting i have combined 80 grams cream cheese, icing sugar and vanilla essence in a bowl and whisked until smooth.

I have then spread this onto the tops of each cake.

Lastly, i have made some Muesli Bars.

I have combined golden syrup, butter and sugar in a saucepan and brought this to a slow simmer until smooth.

I have then added this to flour, oats, coconut and sultana mixture. I have spread into a pan and cooked for 20 minutes.

I have then allowed to cool in the pan until completely cooled and cut into bars.
