Happy Mothers Day to all the mum’s out there.

We celebrated Mothers Day by cheating and going out for lunch. But we did come back home to enjoy a cuppa and a nice slice of Mars Bar Cheesecake that i prepared this morning.

To make this cheesecake i have combined Oreo Biscuit crumbs with butter and then pressed into a spring-form pan. I have then placed this in the freezer to set.

I have then combined the chocolate and instead of using cream i have used natural greek yoghurt. I have placed these in a saucepan and melted.

I have then combined the butter, yoghurt and white sugar (I had run out of brown sugar) in a small pan and allowed to simmer to make the caramel.

Next i have combined the cream cheese and caster sugar until smooth and then added the gelatine and the chopped up Mars Bars. Then lastly the yoghurt and combined until all mixed through.

I have poured half of the cheesecake mix into the pan and the poured half of the chocolate sauce and half of the caramel sauce over top. I have then topped with the remaining cheesecake mixture. Lastly i have topped with the last of the chocolate and caramel sauce and have run through the top with a skewer.

I have then placed this cheesecake into the freezer to allow to set until ready to eat.

The use of the natural greek yoghurt was much better then i thought. It gave the cheesecake a much different flavour but worked very well. The yoghurt has stopped the cheesecake from being very sweet with all the chocolate, sugar and the cream.

Lastly, dinner tonight was just something small. I made up some sausage rolls, cheated though. I bought and used i pre-made sausage mince pack from Coles. Not the best, needs more flavour, or vegies. My sausage rolls usually have a lot more vegies hidden inside them. I have cut these into bite sized pieces and placed on a tray. I have cooked these for about 10 minutes until golden.

However, for a quick meal they were fine. Served these with sauce.

Now i had half a sheet of pastry left, what to do? I did not have any cream, so no point making match sticks.

So i have brushed crushed garlic on the pastry and then sprinkled with parmesan cheese.

I have folded the pastry in half and then cut up and placed in the oven for about 10 minutes until browned.
