So a weeks worth of cooking in one blog. Mind you this will be the second time that i have written this. Tried typing this on Sunday and lost the lot. Damn!

On Tuesday night i have prepared a sausage casserole in the bowl of a slow cooker.

Using eight sausages cut into fours, half a cup of onion, half a cup of bacon pieces, two carrots and two potatoes, a can of diced tomatoes, water and mixed herbs.

I have placed all these ingredients in the bowl and then placed in the fridge overnight.

The next morning i have turned the slow cooker on and allowed this to cook for the entire day.

I have gotten home on Wednesday night to a beautiful smelling house. But before i sat down to enjoy this casserole I have made Oreo Cheesecakes ready for morning tea the following day.

I have split 10 Oreo’s in half and placed into the base of each cup cake pan. After this I have combined cream cheese, cream, sugar and vanilla essense until smooth.

I have then dropped a dessert spoon of the cheese batter into each cup and then topped each again with another half of an Oreo.

These have then been put into the fridge to set.

Thursday night i have come home and made a very quick rissoni. I have cheated with this by using a packet of quick cook carbonara flavoured rissoni. I have cooked this according to the packet except I have added half a cup of peas once i have added the packet mix.

Now for the difference and the spin. Whilst the rissoni was simmering i have pan fried four sliced up short crust bacon strips in a pan.

Once the rissoni has cooked i have mixed in the bacon and a teaspoon of mint leaves and served this in a bowl. I have then topped with parmesan cheese and a little cracked pepper. Volia!

Saturday night we were having steak. I felt like Scalloped Potatoes.

So using one normal white potato and half of a large sweet potato thinly sliced, onion, mozzarella cheese, cream, paprika, parsley and bacon chips.

I have layed out the sweet potato in a loaf tin and then topped with onion and cheese, i have then topped with another layer of potato and repeated until the potato has been used up.

I have then mixed the cream, paprika, parsley, bacon chips together and then poured this cream mixture over the potatoes and topped with cheese.

I have then baked this for 30 minutes.

Sunday morning breakfast was French Toast.

I have used six pieces of continental bread.

I a bowl i have mixed up soy milk, eggs, cinnamon and salt. I have then dipped each piece of bread in the milk mixture and then placed onto a heated pan to cook until browned on both sides.

I have then sprinkled each piece of bread with vanilla sugar.

I have then served these with apricot jam and maple syrup.

Last thing to be added to this is Sunday dinner. Meatloaf.

I have combined beef mince, two carrots, tomato chutney, breadcrumbs, egg, salt and pepper and thyme.

I have then divided the mixture into two loaf tins and then smeared the tops of each with chutney. I have then cooked these for 30 minutes.

After 30 minutes i have then topped with some grated cheese and cooked for another 15 minutes. I have then served these with steamed vegetables and gravy.
