Ingredients
- 1/4 cup Slivered Almonds
- 1/4 leaves Red Cabbage outerremoved, finely shredded
- 1 Carrot peeled, finely sliced into thin strips
- 2 Apples washed, quartered, cored, cut into thin wedges
- 1/4 cup Parsley roughly chopped fresh
- 1 1/2 tablespoons Lemon Juice
- 1 tablespoon Olive Oil
- Black Pepper Freshly ground

Instructions
- Heat a small non-stick frying pan over a low heat. Cook almonds for 4-5 minutes or until light golden. Transfer to a plate.
- Place the cabbage, carrot, apples, parsley and almonds in a large bowl. Toss to combine.
- Whisk the lemon juice, oil and pepper together. Add to the apple mixture and toss to combine.
