- 4 cups Apples coarsely chopped
- 2 cups Sugar
- 2 Eggs
- 1/2 cup Vegetable Oil
- 2 tablespoons Vanilla
- 1 tablespoon Salt
- 2 tablespoons Bi Carbonate of Soda
- 2 tablespoons Cinnamon
- 1 cup Walnuts chopped
- 2 cups Plain Flour

- 4 tablespoons Butter
- 3 cups Caster Sugar
- pinch Salt
- 2 tablespoons Lemon Juice

Instructions
- Combine apples and sugar and let stand.
- Beat eggs slightly, beat in oil and vanilla.
- Mix and sift flour, bi carbonate of soda, cinnamon and salt; stir alternatively with apples and sugar mixture.
- Stir in walnuts, pour in greased pan, bake at 175c for 60 minutes or until cake test done. Allow cake to cool completely before frosting.
- For the frosting; Cream butter, add sugar, gradually creaming thoroughly; beat in juice and enough cold water to make spreading consistency; beat in salt and spread on cake.
