Ingredients: 

Olive Oil Spray

125g Chicken Breast, diced

1/4 Red Onion, thinly sliced

1/2 teaspoon Ginger, finely grated

1/2 teaspoon ground Cumin

15g Dried Apricots, chopped

1/4 cups Chicken Stock

1 1/2 tablespoons Apricot Nectar

65g canned Chickpeas, rinsed and drained

120g Broccolini, steamed

Method: 
  1. Spray a large saucepan with oil and heat over high heat. Cook chicken, stirring occasionally, for 2-3 minutes or until golden. Transfer to a plate.
  2. Spray pan again and return pan to medium heat. Cook onion, stirring occasionally, for 5 minutes or until softened. Add ginger and cumin, cook for 1 minute or until fragrant.
  3. Return chicken to pan with apricots, stock, nectar and chickpeas and bring to the boil. Reduce heat and simmer for 10 minutes or until thickened slightly.
  4. Serve with steamed broccolini.
