- 1 tablespoon Olive Oil
- 2 tablespoons Golden Syrup
- Salt and Pepper
- 750 grams Carrots trimmed, lengthways
- 1 tablespoon Seasoned Stuffing Mix
- 1 1/2 tablespoons Walnuts chopped
- 20 grams Butter softened

Instructions
- Preheat oven to 200c. Place olive oil and golden syrup into a roasting pan. Season with salt and pepper.
- Place pan into oven for 3 minutes until syrup melts. Meanwhile peel, trim and halve carrots length ways.
- Add carrots to pan, turning to coat with syrup. Roast, turning occasionally, for 20 minutes.
- Meanwhile, combine stuffing mix, walnuts and butter. Scatter over carrots, roast for a further 10 minutes until carrots are just tender. Serve.
