  1. Preheat oven to 200c. Place olive oil and golden syrup into a roasting pan. Season with salt and pepper.
  2. Place pan into oven for 3 minutes until syrup melts. Meanwhile peel, trim and halve carrots length ways.
  3. Add carrots to pan, turning to coat with syrup. Roast, turning occasionally, for 20 minutes.
  4. Meanwhile, combine stuffing mix, walnuts and butter. Scatter over carrots, roast for a further 10 minutes until carrots are just tender. Serve.
