Ingredients
- 2/3 cup Plain Flour sifted
- 1 teaspoon Bi Carbonate of Soda
- 1/2 cup Rolled Oats
- 3/4 cup Raw Sugar
- 1/3 cup Rice Bran Oil or Vegetable Oil
- 1 Egg lightly beaten
- 3 Bananas peeled and mashed
- 2 teaspoons Vanilla Extract
- 1/3 cup Pecans or Walnuts, chopped

Instructions
- Preheat the oven to 180 C. Grease a tray of 12 x 1/3-cup muffin cups or line with paper cases.
- Sift the flour and bicarb into a bowl, add oats and sugar. Combine oil, egg, banana and vanilla in a bowl.
- Add banana mixture to flour and mix quickly to combine. Top with walnuts and bake for 18-20 min until golden. Cool on a rack before storing.
