- 2 cups Shredded Coconut
- 2 tablespoons Coconut Oil
- 1 tablespoon Vanilla Protein Powder
- 1 drop Vanilla Extract
- 1/2 cup Dark Chocolate for coating

Instructions
- Process shredded coconut until fine.
- Add coconut oil, protein powder and vanilla extract, process until combined well.
- Roll into 16 nites and refrigerate until set.
- Once the bites are set, melt your dark chocolate in the microwave in 30 second intervals, stirring well every 30 seconds until melted.
- Using a toothpick, to stab into coconut bite and coat with the dark chocolate.
- Pop into the freezer to set.
