  1. Grease a cupcake tin with butter or cooking spray.
  2. Place a slice of ham in each cupcake cup to make as a liner.
  3. In the bottom of the cup add shredded carrot.
  4. Crack an egg in each cup and sprinkle with chives.
  5. Bake in a moderate oven for 8-10 minutes, until ham is crisp and egg is set.
