2 Roma Tomatoes, chopped

2 Yellow Roma Tomatoes, chopped

1 small Red Onion, finely chopped

1/4 cup pitted Olives, chopped

2 cloves Garlic, finely chopped

2 tablespoons chopped fresh Basil

Olive Oil and Black Pepper

1 loaf Custy Bread

125g Butter, softened

2 tablespoons grated Parmesan Cheese

Black Pepper

  1. Combine the tomatoes, onion olives, garlic and basil. Season to taste with olive oil and black pepper, chill until required.
  2. Slice loaf and lay pieces flat. Combine the butter and parmesan in a bowl and season with black pepper. Spread over bread slices.
  3. Preheat the barbeque grill or flat plate; grill the slices of bread until warm and golden.
  4. Serve slices topped with salsa.
