  1. Whisk egg, unsalted butter, milk, caster sugar and vanilla essence in a medium bowl until combined. Sift self-raising flour into a medium bowl and gradually whisk in egg mixture until mixture forms a smooth batter. Stir in Choc Bits.
  2. Heat a large non-stick frying pan over a medium heat. Brush pan with a little of the extra melted butter. Spoon 1 tblsp of batter into pan and repeat to make four pikelets. Cook until bubbles appear on surface of pikelets. Turn pikelets and cook until lightly browned. Remove from pan and cover to keep warm. Repeat with remaining extra butter and batter.
  3. Serve the pikelets lightly sprinkled with cinnamon sugar. Decorate with raspberries.
