Ingredients: 

600g Pumpkin, peeled and roughly chopped
1 tablespoon Olive Oil
2 Spring Onions, sliced
150g Baby Spinach
70ml Caesar Dressing
15g Crunchy Salad Blend

Method: 

1. Toss pumpkin pieces in oil and then roast in a hot 200 degree C oven until tender, approx 20 minutes. Allow to cool slightly.
2. Toss pumpkin with spring onions, spinach leaves and caesar dressing. Sprinkle with crunchy salad blend, toss again to serve.
