150g Sugar Snap Peas
150g Snow Peas, halved lengthwise
1 large Continental Cucumber, peeled and diced
1 medium rotisserie Chicken
70g Caesar Dressing
15g Mixed Seeds and Nut Blend
1. Combine the first three ingredients in a medium saucepan and bring to the boil. Allow to simmer for 3 minutes, then drain and cool under cold water.
2. Toss in a large bowl with the diced cucumber. Remove the chicken meat from the bones and skin, and tear into bite-sized pieces. Add to the salad bowl along with the greens.
3. Toss with the Caesar dressing and mixed seeds and nut blend, and serve immediately.
