90g Haloumi

1/2 Raw Beetroot, roasted and diced

1/4 Butternut Pumpkin, sliced thinly

1/4 cup Chickpeas

Large handful of Baby Salad Leaves

1 tablespoon Pistachip Dukkah

Sweet Mustard Dressing:

1 teaspoon Wholegrain Mustard

1/2 teaspoon granulated Sweetener

1/2 teaspoon White Balsamic Vinegar

1 teaspoon Avocado Oil

1/2 teaspoon Lemon Juice

  1. Chargrill the Haloumi and pumpkin in a grill pan sprayed with coconut oil for a few minutes each side.
  2. Place all dressing ingredients in a container and shake well.
  3. Assemble all ingredients in a bowl and top with Dukkah and dressing.
