- 900 grams Sweet Potatoes scrubbed
- 1 ½ tablespoon Margarine
- ¼ cup Orange Juice
- 2 tablespoon Honey

Instructions
- Cook unpeeled potatoes in boiling, lightly salted water until just tender. Drain. Peel half of each potato lengthwise.
- Spray a shallow baking dish with cooking spray. Arrange potatoes in dish.
- Heat together margarine, orange juice and honey. Spoon over the potatoes and bake at 200c for 15 to 20 minutes.
