Ingredients
- 125 grams Unsalted Butter chopped
- 250 grams Dark Chocolate
- 1/2 cup Caster Sugar
- 3 Eggs lightly beaten
- 1 tablespoon Orange Rind finely grated
- 1 cup Plain Flour
- 1/2 cup Dark Chocolate Melts melted
- 12 Chocolate Orange Segments
- Orange Rind Shredded , to decorate

Instructions
- Line a 12 hole muffin pan with paper cases.
- Place butter and cooking chocolate in a medium heatproof bowl. Sit bowl over a pan of simmering water. Stir until smooth. Remove. Using a wooden spoon, stir in sugar, eggs and rind. Add flour. Mix well. Divide mixture evenly among prepared pan holes.
- Cook in a moderately slow oven (160c) for about 20 minutes, or until firm. Stand for 5 minutes before transferring cupcakes to a wire rack to cool.
- Spoon 1 teaspoon dark chocolate on top of each cupcake. Decorate each cake with a chocolate orange segment and shredded orange rind.
