- 1 1/2 cups Mixed Fruit
- 2 cups Self Raising Flour
- 1 Egg
- 3 oz Butter
- 3/4 cup Sugar
- 1 cup Boiling Water
- Orange Rind Grated

Instructions
- Put fruit, sugar and butter in a bowl, pour in boiling water and stir well. Allow to cool down.
- Once cooled down, add a well beaten egg and the orange rind. Add the flour and mix until combined.
- Cook in a long loaf tin in a moderate, 180c, oven for 45-50 minutes.
