- 1 kg Red Capsicum
- 2 - 3 tablespoons Olive Oil
- 1 Garlic Clove crushed
- 1/2 teaspoon Pepper
- 1 teaspoon Salt

Instructions
- Cut Capsicums into quarters and remove the seeds.
- Place into slow cooker, drizzle with a little olive oil, about a tablespoon or so.
- Cook on high for 4 hours or low for 7 hours.
- Remove skins while hot.
