Ingredients
- 1 kg Potatoes
- 2 teaspoons Olive Oil
- 2 Chorizo Sausage sliced
- 1 bunch Watercress trimmed, sprigs picked
- 1/4 cup Parsley chopped

- 1/2 cup Whole-Egg Mayonnaise
- 2 teaspoons Lemon Juice
- 2 teaspoons Seeded Mustard
- 1 tablespoon Sour Cream

Instructions
- Boil, steam or microwave potatoes until tender. Slice thickly while still warm.
- Meanwhile, heat oil in medium fry-pan. Cook chorizo until browned. Drain on absorbent paper.
- In a large bowl, combine potatoes, chorizo, watercress and parsley. Pour mayonnaise dressing over and mix well. Serve in a large bowl.
- To make the dressing; Combine ingredients in a small bowl, mix well.
