Ingredients: 

1 tablespoon Oil
500g Lamb Back Strap
70ml French Dressing
150g Baby Spinach
1 punnet Cherry Tomatoes
15g Crunchy Salad Blend
15g Garlic and Herb Croutons

Method: 

1. In a large frying pan heat oil and sear lamb until medium rare, about 6 minutes. Allow to rest for 3 minutes, and then slice.
2. Place sliced lamb in French dressing for 10 minutes then toss with spinach and cherry tomatoes.
3. Sprinkle over crunchy salad blend, and Garlic and Herb croutons and serve.
