Instructions
Toss pumpkin pieces in oil and then roast in a hot 200 degree C oven until tender, approx 20 minutes. Allow to cool slightly.
Toss pumpkin with spring onions, spinach leaves and Caesar dressing. Sprinkle with crunchy salad blend, toss again to serve.
