  1. In the food processor, blend up the shredded coconut, scraping the sides down every few minutes. Be patient as this will take about 20 minutes.

If you use a blender, it takes about half the time, but you have to scrape down the sides more often and it is harder to manage.

In the food processor you can mix it for a minute, then walk away. Come back to mix some more a few minutes later. Keep repeating process until it is a creamy mixtures.

Store in a small jar. Will keep for a couple of weeks. Can keep on the counter top or the fridge but if you keep in the fridge it will be harder.
