Instructions
Cook onion, carrot, celery and garlic in olive oil over medium heat for 5 minutes until soft.
Slice chorizo, add to pan and cook until crisp.
Stir in tomato sauce and 4 cups of water. Bring to the boil; add zucchini, macaroni and beans.
Simmer for 10 minutes until macaroni is tender. Add chopped parsley and season to taste.
Ladle into bowls. Drizzle with oil and top with parmesan cheese.
