  1. Heat pan and toast hazelnuts over low heat for 5-6 minutes, tossing occasionally.
  2. Remove, rub in a tea towel to remove the outer skin. Chop roughly.
  3. Combine yoghurt, lemon juice, rind and pepper. Add to combined cos lettuce, apple and hazelnuts. Toss gently to coat.
