  2. Pour boiling water over well-scored pork skin.
  3. Cover with lemon juice and plenty of salt.
  4. Bake on high 15-20 minutes (until it blisters nicely)
  5. Turn oven down to 170 degrees C and let the crackling cook for 45 minutes until crispy all over.
