peeled, finely sliced into thin strips

washed, quartered, cored, cut into thin wedges

Instructions
Heat a small non-stick frying pan over a low heat. Cook almonds for 4-5 minutes or until light golden. Transfer to a plate.
Place the cabbage, carrot, apples, parsley and almonds in a large bowl. Toss to combine.
Whisk the lemon juice, oil and pepper together. Add to the apple mixture and toss to combine.
