Ingredients
Leftover Chicken Afritada and Veg
about 2 marylands would suffice

finely diced

roughly chopped to 1 cm dice

washed, roughly chopped

(optional), roughly chopped

Tortilla Wrappers
warmed in oven

Instructions
Strip the chicken, using a fork to scrape the meat off the bone, then set aside.
Strain the sauce from the leftover vegetables and lightly mash.
Mix the vegies and chicken together, then set aside.
In a separate bowl, mix the onion, tomatoes, coriander and chilli to make a salsa.
Place the chicken in a wrapper, topped with a little salsa, sour cream and shredded cheddar and roll like a big spring roll.
