  1. Preheat oven to 180c. Line an oven tray with baking paper. Mix the hazelnut meal, icing sugar and cocoa in a bowl, then stir in egg white. Form into teaspoon sized balls and put on prepared tray. Bake for 10-12 minutes.
  2. Put cream in a small heavy based pan and heat to a simmer, then whisk in chocolate. Pour into a small mixing bowl and keep in a cool place until mixture has cooled and thickened to a spreading consistency. Sandwich 2 baked cookies together with a little chocolate cream and serve.
