  1. Mix potatoes, egg, flour, Panko and cheese together in a bowl.
  2. Form a flat potato patty – top with 2 tablespoons pulled pork. Form into a closed small egg shape making sure the potato mixture completely encases the pork.
  3. Deep fry in canola oil for 6-7 minutes each turning often. Depending on your size of tater tots this can take a couple of extra minutes.
  4. Remove from oil when the tots are a deep golden brown.
  5. Season with your favourite BBQ rub and serve with BBQ sauce or ketchup
