Option One
  1. Start with eggs at room temperature – if you are using eggs from the fridge, add an extra 30 seconds on to the cooking time. If you have an egg prick, prick the rounded end of the raw egg to allow the air under the shell to escape. This will prevent the shell cracking when boiling.
  2. For eggs in cold water. Place the eggs in a medium saucepan. If the saucepan is too large, the eggs knock into each other and crack the shells. Fill the pan with cold water until 1 cm above the eggs. Too much water means it takes longer for the water to come to the boil and can change timings.
  3. Place over medium-high heat and bring to the boil. Start the timer once the water is boiling. Reduce heat to medium and cook for 3 minutes for soft-boiled is just-set while with a runny yolk. For medium-boiled, cook for 4 minutes and for 5 minutes for hard-boiled eggs.
Option Two
  1. To start with boiling water, gently add eggs to boiling water and stir until water and stir until water returns to the boil. Cook for 4 ½ minutes for soft-boiled eggs. For medium, cook for 6 minutes and 8 minutes for hard boiled. Never have the water at a rapid boil, have it simmering.
