  1. Slice bottom of potatoes so they sit flat on oven tray.
  2. Cut slits into potatoes 3/4 of the way through.
  3. Place in cold water, dry, drain and the brush oil.
  4. Bake in moderate 180c oven for 1 hour.
  5. Sprinkle with butter and cheese.
  6. Bake for 10 minutes extra.
