Sift flour, baking powder, salt and sugar into a bowl. In a large jug, sprinkle yeast over water. Stand for 5 minutes until bubbles begin to form.
Add yeast mixture to flour mixture. Using an electric mixer, beat together until smooth.
Heat a lightly greased medium frying pan on high. Place lightly greased egg rings in the frying pan. Once heated, pour in enough mixture to 3/4 fill egg rings.
Cook crumpets on low heat for 12-15 minutes, until surface is filled with holes. Remove egg rings and turn to cook other side for 1-2 minutes, until golden.
Recipe Notes
– If making crumpets ahead of time, toast them before serving.
– Remaining crumpets can be frozen.
– They are also delicious with honey, jam, Vegemite, cheese, etc.
