Instructions
1. In a large bowl, mix oats, shredded coconut, and chia seeds.
2. Add peanut butter, honey, and vanilla extract. Stir until well combined.
3. Fold in mini chocolate chips if using.
4. Roll mixture into small balls (about 1-inch in diameter).
5. Place on a parchment-lined tray and refrigerate for 30 minutes.
