Butternut Pumpkin

or Vegetable

or Sour Cream

Instructions
Heat to oil over medium heat in a pot or pan with lid. Fry the onion and garlic until soft.
Add the chopped pumpkin and ginger.
Stir for a couple minutes, and then add enough stock to just cover the pumpkin. Simmer with lid off for 10-15 minutes, or until the mixture is cooked.
Process or mash the pumpkin until it’s either slightly lumpy or smooth.
Stir through the cream, and then season with salt ans pepper.
Serve with extra cream and fresh cut chives for a professional finish.
