Ingredients: 

Marinade:

1 tablespoon Sesame Oil

2 tablespoons Tamari

2 tablespoons Lime Juice

1 small Red Chill, diced

1 tablespoon Coconut Nectar

Pinch Salt

Filling:

1 cup Swiss Brown Mushrooms, diced

2 tablespoons grated Ginger

1 clove Garlic, minced

1 red Capsicum, diced

10cm piece Daikon or Radish, diced

2 Spring Onions, sliced

1 cup Walnuts, soaked 4 hours, drained and chopped

2 Corn Cobs, kernals removed

1 cup Green Beans, sliced

1/2 bunch Coriander, chopped

1/2 bunch Mint, chopped

 

12 Iceberg Lettuce Cups

Sliced Green Onions and Sesame Seeds to serve. 

Method: 
  1. Marinade: Combine all ingredients together in a bowl. Adjust to taste and set aside.
  2. Filling: Place all ingredients in large bowl. Pour over marinade, stir and let sit for 10 minutes. This will soften the vegetables also.
  3. Spoon the filling into lettuce cups and garnish with spring onions and sesame seeds. 
  4. Roll up and eat!
