Ingredients
- 2 punnets Strawberries
- 1/4 cup Brown Sugar firmly packed
- 4 teaspoons White Sugar or Castor Sugar
- 1 cup Greek Yoghurt reduced fat
- 1/4 cup Sour Cream
- 1/4 cup Orange Rind or Lemon Rind, grated

Instructions
- In a bowl, combine the strawberries together with the brown and white sugar. Mix and allow to stand in the fridge for 20 minutes to release the strawberry juice.
- In a separate bowl, mix the yoghurt, sour cream and orange rind.
- Layer the strawberries and yoghurt in parfait glasses, alternating between the two.
- Decorate with mint and slivered almonds and serve straight away.
- Layer the strawberries thicker than the yoghurt for a more elegant appearance.
