Ingredients
- 1 cup Dates Or 1/2 cup Coconut Sugar
- 100 grams Butter softened
- 2 Eggs can swap for a chia or flax egg
- 1 Carrot
- 1 Apples
- 1 tablespoon Orange Zest
- 1 cup Plain Flour can use wholemeal or gluten free
- 1 teaspoon Cinnamon
- 1 teaspoon Nutmeg
- 1/2 teaspoons Bi Carbonate of Soda
- 2 tablespoons Milk

Instructions
- Soak your cup of dates in boiling water for 10 mins ( you want them soft)
- Soften your butter
- Blend your dates until they are a paste
- Cream butter and dates until light and fluffy (Or coconut sugar)
- Add two eggs at room temperature, mixing well to incorporate the eggs
- Peel and grate your apple and then do the same with the carrot.
- Using the fine side of the grater, grate your orange rind
- Add your grated ingredients into the wet mixture
- Add your dry ingredients into the wet mixture and fold in
- Fold your milk into the mixture
- Spoon mixture into lined muffin tray and bake on 180 degrees for 15 minutes
Recipe Notes
If you love apple you can great half the apple and cut the other half into chunks, then fold through the mixture for more bursts of apple flavour.
The coconut sugar gives the muffins a caramel flavour that is delicious.
