Instructions
  1. Put the water, tea bag and cinnamon stick in a small saucepan. Cover and bring to the boil over a high heat. Remove pan from heat. Cover and set aside for 5 minutes to steep. Discard the tea bag and cinnamon stick.
  2. Stir the milk, vanilla essence, ginger and cardamom into the tea. Return to a medium heat (do not boil) and cook, stirring, until mixture is heated through. Remove pan from heat. Add the sugar and stir until it dissolves.
  3. Pour the chai into heatproof glasses. Sprinkle with cinnamon and add a cinnamon stick, if you like, to serve.
