Ingredients: 

300 g Bowtie Pasta Shapes
1 tablespoon Oil
25 g Butter
1 Onion, chopped
1/2 Capsicum, finely chopped
2 cup Mushrooms, sliced
1 cup Corn Cob Kernels
1 Carrot, cut into matchsticks
2 cup Barbecued Cooked Chicken, chopped
1 cup Tasty Cheese, grated
1 cup Mozzarella, grated
1/2 cup Milk
1 tablespoon Parsley, flaked
1 tablespoon Chives
1/2 cup Mozzarella
1 cup Parmesan Cheese, grated

Method: 
  1. Heat oven to 180C.

  2. Saute onion, capsicum and mushrooms in oil and butter until soft.

  3. While vegetables are cooking, boil pasta until just tender.

  4. Stir corn and carrots into onion mixture and heat for a few more minutes.

  5. Stir through chicken, and then cheeses, milk and herbs.

  6. Stir in pasta.

  7. Place mixture in a casserole dish and sprinkle with extra mozzarella and parmesan cheese.

  8. Bake for approximately 25-30 minutes.

    Notes
    This is one of those 'clean out the fridge' kind of recipes, so add any vegetables you like.
