- 600 grams Pumpkin peeled and roughly chopped
- 1 tablespoon Olive Oil
- 2 Spring Onions sliced
- 150 grams Baby Spinach
- 70 ml Caesar Salad Dressing
- 15 grams Crunchy Salad Blend

Instructions
- Toss pumpkin pieces in oil and then roast in a hot 200 degree C oven until tender, approx 20 minutes. Allow to cool slightly.
- Toss pumpkin with spring onions, spinach leaves and Caesar dressing. Sprinkle with crunchy salad blend, toss again to serve.
