- 1 Basic Bread Dough Mix
- 1 Lemon Finely grated rind
- 1 teaspoon Vanilla Extract
Filling
- ½ cup Hazelnuts Roasted , finely chopped
- ½ cup Raisins chopped
- 2 tablespoons Pinenuts Toasted , chopped
- 4 Sponge Finger Biscuits chopped
- 1 tablespoon Cocoa Powder
- 1 teaspoon Cinnamon Ground
- 1/3 cup Marsala
- 1 Egg 1 Egg whisked with 1 tablespoon Water

Instructions
- Prepare basic bread dough, replacing orange rind with lemon rind. Omit cardamom and add vanilla extract to eggs. Continue to end of step 2.
- Preheat oven to 200c. Grease a 20 cm spring form cake pan with butter and line base with baking paper. Combine filling ingredients except egg wash in a bowl.
- Roll dough out on a lightly floured surface to make a 32 cm x 52 cm rectangle. Sprinkle filling over dough, leaving a 3 cm border around the edge of dough. Roll up from long edge to form a long sausage shape.
- Coil dough and place into prepared pan. Brush with egg wash. Bake for 30 minutes or until bread sounds hollow when tapped and centre feels firm to the touch. Transfer to a wire rack to cool. Serve.
