Ingredients
- 2 cups White Sugar
- 1/2 cup Water
- 2 tablespoons Gelatine Powder
- 8 tablespoons Cold Water
- pinch Salt
- 1 teaspoon Vanilla Extract or Vanilla Bean Paste

Instructions
- Dissolve the gelatine with the 8 tablespoons cold water in a bowl and let sit.
- In a saucepan on low heat, dissolve sugar with half cup water. Brush down sides of saucepan.
- Once dissolved, add gelatine mix and bring to boil.
- Take off heat and rest in a bowl until luke warm.
- Transfer to your mixer and beat on high for 12-14 minutes until fluffy and white.
- Pour into a greased and lined pan, or pip into your own creations.
