Ingredients
- 800 grams Veal Mince
- 1 Zucchini roughly grated
- 1 Carrot roughly grated
- 1/3 cup Breadcrumbs
- 2 tablespoons Tomato Chutney
- 1 Egg Yolks
- Salt and Black Pepper
- 1 teaspoon Thyme Leaves
- 6 slices Ham Shaved
- ½ cup Cheese grated

Instructions
- Preheat oven to 180c.
- Place the mince in a large bowl with the zucchini, carrot, breadcrumbs, chutney, egg yolk, salt, pepper and thyme. Mix together with your hands until fully combined then transfer mixture to a lightly greased loaf tin.
- Cover with foil and cook for 30 minutes. Remove from the oven and top the meatloaf with slices of ham. Sprinkle with cheese and return to the oven uncovered. Cook for a further 15-20 minutes or until cooked through and golden on top.
- Stand for 5 minutes before serving with salad or steamed vegetables.
