  1. Rub the spices into chicken in the pressure cooker. Add water and BBQ sauce.
  2. Add the chopped red onion.
  3. Mix all ingredients together nicely.
  4. Secure and lock the pressure cooker.
  5. Put in the microwave for 30 mins on 900 watts.
  6. Once cooked and pressure released take out chicken and use 2 forks to shred meat. Add some of the remaining juices for flavour and to keep the meat moist.
  7. Serve with coleslaw on rolls.
Recipe Notes

You can also use pork for this recipe, 850 grams pork shoulder, cut into chunks. Take the skin and fat off.
