  1. Leaving the peel on, cut the oranges in half and then into half moon shapes.
  2. Bring sugar and 2 cups of water to the boil in a saucepan, stirring occasionally until sugar dissolves. Add orange slices to the boiling sugar syrup, reduce heat. Cover with baking paper and gently simmer until orange slices are soft, about 1 hour and 45 minutes.
  3. Using a spoon, transfer peel to a wire rack. Let dry until sticky, about 1 hour.
  4. Stir chocolate in a small bowl set over a saucepan of simmering water until melted and smooth.
  5. Dip on half of the oranges in chocolate and place on a silicon baking sheet or tray lined with baking paper. Refrigerate for 15 minutes until set.
