Instructions
  1. Combine sugar, water and ginger and stir over low heat to make a syrup.
  2. Simmer until reduced by half.
  3. Cool in the fridge.
  4. Add the gin, ginger syrup and lime juice into a jug and stir.
  5. Add 50 mls into glasses and top with soda water. Garnish with sliced limes.
