Instructions
Whisk eggs, sugar, lemon juice and lemon zest in a bowl set over a pot of simmering water.
Whisk in butter until it melts and the curd begins to thicken.
Once thickened, cool curd completely and refrigerate, covered, until serving.
Serve curd with pavlova or inside tart shells.
