Rich Chocolate Icing
Instructions
  1. Preheat the oven to moderate (180C). Brush a deep, 20 cm baba or ring tin with melted butter or oil.
  2. Place all the ingredients in a food processor. Process in short bursts until the mixture is well combined and has a smooth texture.
  3. Spoon the mixture evenly into the prepared tin. Bake for 35-40 minutes, or until a skewer comes out clean when inserted into the centre of the cake. Leave the cake in the tin for 10 minutes before turning onto a wire rack to cool.
  4. Combine the butter, chocolate and cream in a small heatproof bowl. Stand over a pan of simmering water and stir until the butter and chocolate have melted and the mixture is smooth. Cool slightly until the mixture is spreadable. Spread icing over cake using a wide knife.
  5. To serve drizzle with rich chocolate icing if desired
